  • Yeast – Do not use bread yeast. This must specifically be wine yeast.
  • Water

Method

Put the cherries into a large pan and then pour over boiling water. Dissolve the sugar in another pan of hot water and when this is cool, add it along with the Campden tablets to the cherries. Mix it well and then add the yeast. Mix again, and then cover it for at least a week. Stir it at least once a day.

After a week, put the mixture through a strainer and into a clean pot. Cover it again and keep it for another week, remembering to stir it well every day. Put it through a sieve again and this time pour it into a demijohn bottle. Fill the rest of the bottle with cold water, and then add an airlock and stopper to the demijohn.

When the airlock stops displaying bubbles, you are able to siphon the wine off into separate bottles. Store the bottles on specially made racks in a cool dark place. Your Home Made Wine is now ready to consume. If required, you may chill it before hand.
